Noodles, the new/old normal


What an odd time this is, filled with uncertainty, fear, isolation, things that don't appear very positive. However, I prefer to see this as a time to reflect, reprioritize, and renew. In some ways, this is a great gift, to divert our focus, which up to this point has been on the busy-ness of life, achievement, success. Maybe this is just what we needed, slowing down enough to breathe, to exhale (keeping social distancing, of course), a great global sigh, filled with intention and prayer.

One of my friends who is in Italy, suggested we use what we already have before going to the store. Good advice. I've decided to do just that, and thought I'd share a recipe.

Cooking for one can be a bit of a struggle when it comes to making something interesting. Most nights, I just cook spaghetti noodles. Not all that exciting, but now that I've learned to cook them correctly (just past the crunchy stage, not sticking to the ceiling), it's made all the difference.

It's nothing earth-shattering, until I add a nice splash of good quality olive oil, a bit of shredded parmesan, and a healthy dose of Divine Inspired Spice. All of a sudden, I've got a fast, easy, low-budget, great-tasting meal.

If I've got a lemon on hand, I'll add a squeeze of lemon juice and dash of pepper. If I'm feeling extra fancy, I'll add some lemon zest, or basil, thyme, or tarragon, or all of the above, if they're on hand. If I've got veggies, I'll chop them up or sauté them with garlic and shallots, which are usually in the house, and always add Divine Inspired Spice because it's delicious!

During this time of isolation, I will try to share some easy recipes that are great for one. If you don't have a jar of Divine Inspired Spice, I'm still shipping and would be happy to send you some. I always like to add a little something extra to the shipment, just for being you.
